A small microlot from producers Lisa & Leo Organics.
“The Sipayung clan is a large Batak clan in Simalungun. Mikhayla and his wife are now in their third year as producers and their second year with L&L Organic. We continue to assist with crop management and harvesting to maintain quality control of the cherry for an outstanding natural process coffee and a this season, a washed coffee.”
Region: Huta Raja, Simalungun North Sumatra
Elevation: 1500 meters
Varietal: Catimor-Typica, S795
Processing: full washed, dry hulled
Taste note:
The cherries are sorted and pulped immediately for fully washed coffee. The drying and resting time for the parchment is an average of 21 days here in the highlands of Simalungun. Parchment is dried on raised beds and then rested for increased sweetness and complexity before dry hulling. . A clean, sweet coffee with the lighter body and acidity associated with a full wash but still maintaining the flavors and long syrupy aftertaste that define Sumatra arabicas.
